Vegetarian potato stooping recipe

To start the week with a healthy and nutritious menu, this meat -free vegetable stew proves that we propose in recipes. It is a stew of vegetarian potatoes accompanied by some vegetable meatballs of cheddar and thyme cheese, a very original dish with all the taste of fresh vegetables and herbs. As you will see, it is not the typical recipe of potato stew with vegetables with vegetables already which has an original touch of aromatic herbs and cheese meatballs, and like both children and adults. Ingredients to make vegetarian potatoes:
For cheese meatballs ::
30 grams of cheddar cheese
45 grams of margarina
100 grams of wheat flour
1 branch of thyme
For the potato stew ::
2 potatoes
2 carries
1 Rama of celery
1 onion
2 maturo tomato
1 branch of thyme
1 branch of romero
1 branch of fresh oregano
300 milliliters of vegetable broth

Ingredients to make vegetarian potatoes:

1. We prepare a stir-fry with the onion, the carrot and the celery. Let them cook for 5 minutes and add the peeled and chopped tomato in tiny pieces. We put salt and ground black pepper and let it cook for 7 more minutes.





2. Add the peeled and cut potatoes in wedges not very large or small, as seen in the image. We stir well.





3. We incorporate the vegetable or water broth and a fresh thyme, rosemary and oregano. Let the vegetarian potato stew cook for 15-17 minutes, until the potatoes are almost ready.





4. Meanwhile we are going to prepare the vegetarian meatballs of Cheddar cheese. To do this, we mix the flour with the margarine at room temperature, the thyme in hojitas, the crushed cheddar cheese and a splash of water until a dough is formed. Once the dough has been made, we form the meatballs and pass them through flour on an outside.



Trick: The trick is to incorporate more flour or more water until they have the consistency to form balls and do not stick too much to the hands.





5. We place our potato stew with vegetables in an oven fountain, add the vegetarian cheese meatballs and put it in the oven at 190 ºC about 10 minutes, until the meatballs are roasted above.



Trick: You can also fry the meatballs before incorporating them into the meat -free vegetable stew.





6. We serve the stew of vegetarian potatoes with a little parsley and chopped fresh rosemary. Bon Appetite!
