Ingredients to make vegetarian lettuce tacos:

1. We gather all the ingredients to make vegetarian lettuce tacos. The fresh mint can replace it with coriander if you like more.





2. We mislead the lettuce and put the leaves in cold water to wash them. Once washed, we drain them and dry them with absorbent paper.





3. Troce the tomato and purple onion in small squares. It is not necessary to remove the skin from the tomato, so it gives a more whole texture to the taco.





4. Troce the yellow pepper and avocado in small taquitos. We have previously peeled the avocado and removed the main bone. We add the chopped fresh mint.





5. We prepare a dressing with olive oil, a teaspoon of lime juice, a pinch of salt and a pinch of white sugar. We mix well and season the vegetables. For this recipe you can do the Citrus Salad dressing.





6. We fill the lettuce leaves with the vegetables seasoned as if they were tacos and leave them open, as you see in the photo.
