Ingredients to make vegan stuffed zucchini:
1. We gather all the ingredients to make the vegan stuffed zucchini.
2. We remove the ends of the zucchini and split them in half, throughout, as seen in the photo.
3. We take out the zucchini pulp and cut it into small pieces. The shells are available on a baking sheet (later we will put them to bake).
4. On the other hand, we cut the rest of the vegetables of the same size as the zucchini, in squares.
5. We make a stir-fry: first add the onion and the leek, and then the peppers. Let the vegan filling cook for four minutes and add some salt and ground black pepper.
6. Next we add the peeled tomato and cut into small pieces. We cook for three minutes and add the pulp of chopped zucchini. We put a little more salt if necessary. We cook until all vegetables are tender.
7. On the other hand, we put the skin of baked zucchini at 180ºC for approximately 15 minutes.
