It is generally called a milanese to any battered and fried food, and it does not have to be meat. That is why you will love these Milanesas of vegan pumpkin that, in addition to being delicious, are a very original way to serve pumpkin. In this recipe that I bring to recipes, I will share a trick to replace the egg and, therefore, prepare them totally vegan. In this way the milanesas of fries are tender inside and crispy outside. You can serve them with some sauce, for example, with a green coriander mojo.

Ingredients to make vegan pumpkin milanesas:
1. Peel the pumpkin and cut it into thick slices approximately half a centimeter thick.
Trick: For this dish it is better to use the long pumpkin so that the slices go well and the same size.
2. Mix the chickpea flour with the water in a bowl beating with the fork until the texture of a beaten egg obtains, gradually adds the amount of water required by the flour to obtain the desired texture.
3. In another bowl mix the breadcrumbs, garlic and onion powder, salt and proven herbs.
4. Each pumpkin slice passes first through the bowl with the liquid mixture of chickpea flour and then through the breadcrumbs.
5. Put a pan on the fire with a little oil, let it heat and fry the vegan pumpkin milanesas until they are brown on both sides.
Trick: You can also bake the milanesas at 180 ºC for about 30 minutes.
6. Place the milanesas of fries on a plate with absorbent paper to remove excess oil and serve.
