Vegan cauliflower pancake recipe

Ingredients to make vegan cauliflower pancakes:

1. The first thing you should do to perform vegan pancakes is to separate the flowers from the cauliflower, the leaves will not use them. Then, put them in a large and softened pan with water halfway and a stream of olive oil. Cover the pan and cook the flowers until they are soft, then drain them and reserve them.





2. In that same pan, saute the finely chopped onion along with the fennel seeds. You must cook these ingredients also in olive oil. Once the onion becomes transparent, it incorporates the peeled and crushed garlic, lets cook for another minute.

3. Now that the main ingredients are well cooked, it is time to make the dough of the pancakes. To do this, crush the cauliflower flowers with your hands and add them to the pan where you have the onion, re -war it gently so that everything possible will dry but without a puree for forming.





4. When it is, turn off the heat and let the preparation be temper. Then, incorporate three tablespoons of chickpea flour, four wheat flour, yeast, ginger, curry and salt and pepper to taste. Mix well and add more flours if you consider it necessary.

5. When you have the dough made, it forms a small and thick hamburger to fry it over medium heat in little oil. Turn it over to cook on both sides. Let it temper, check the taste and consistency and, if you consider it necessary, add more condiments or flours to the remaining mixture if you notice that it has been lazy. Of course, you do not exceed the flours, especially with chickpeas, because they could eclipse the flavor of cauliflower.

6. Now, we are going to mount the cauliflower pancakes. Take a round mold of about seven centimeters in diameter and place it on a previously oiled oven tray. Enter two tablespoons of the mixture and computer it well. If you don have a mold, you can always opt for a rounded utensil like the one I use.



Trick: Preheat the oven to 200ºC.





7. Remove the mold and repeat the process until the mass ends. Then, pour a thread of oil on the pancakes and bake at 200ºC until they are well made and observe that a crispy crunchy crust has formed up and down.

8. Reserve the pancakes while preparing a seasoning that will give a special touch to the recipe. This step is totally optional. Put very little oil to heat and fry a handful of breadcrumbs, stirring without stopping as if you were making crumbs. When you are slightly roasted, check it out.
