Tumbet recipe with loin (or Iberian secret)

2 potatoes
2 eggplants
2 zucchini
4 Italian green peppers
1 piece of loin or Iberian secret in fillets
4 tomatoes
2 tender onions
ground black pepper to taste
salt thick to taste

Ingredients to tumbet with loin (or Iberian secret):

1. First we peel and cut finely one or two tender onion and three or four tomatoes depending on the amount you make, and we make a stir-fry. Salpimentar at the end and book.





2. This is the scallion before chopping it.





3. On the other hand, peel and cut one or two potatoes more or less than about 2 millimeters and fry them and put on a plate with paper to remove the oil.





4. We do the same with the eggplant, zucchini and peppers fringing them in this order, because the pepper gives flavor to the oil.
