Ingredients to make roasted cauliflower:
1. Remove the sheets of the cauliflower and wash it well. Remember that we will do the whole roasted cauliflower, so that it is not necessary to chop it. However, if you prefer you can do it without problem.
2. You have two options: Cook the steamed cauliflower before baking or introduce it directly to the oven. For the first option, season with garlic, salt and pepper and place the bay leaves. If you do not have a steamer, enter the cauliflower into a strainer, place it into a pot with boiling water (the water should not touch the strainer) and cover the pot to let it cook over medium heat for 15-20 minutes. For the second option, we will tell you how to proceed.
3. Remove the cauliflower from the pot and put it in the tray that you will use to bake it. If you do not want to make the cheese sauce, we recommend mixing the aromatic spices with the water and painting the entire cauliflower with this preparation. This serves both if you cook it before baking it as if not. Preheat the oven at 180 ºC and baked cauliflower for 15 minutes. If you cook it directly in the oven, the cooking time will be 50-60 minutes.
Trick: If you have cooked the steamed cauliflower and want to use the mixture of spices, do not add more salt or more pepper, so that it mixes only the curry, the oregano, the turmeric and the cumin.
4. While the whole cauliflower is cooked in the oven, prepare the cheese sauce. To do this, heat the cream in a pan over low heat. When it starts boiling, add the cheeses and mix until they melt.
Trick: Remember that if you have chosen to use the spice mixture, you can skip this step.
5. When the cheese melts, add mustard, capers and black pepper. Try and, if necessary, add salt too.
6. Pour the cheese sauce on roasted cauliflower and enter it again in the oven, but at 200 ºC during -510 minutes or until the cheese is gratin.
Trick: This step is optional and will depend on whether you want the sauce to gratine or not.
