Ingredients to make Cádiz Veganas:

1. The panizas: mix the chickpea flour with salt and water, adding this little by little to prevent lumps from forming. Next, bring this mixture to the fire for about 15 minutes while stirring until the dough begins to separate from the walls of the saucepan.

2. Incorporate the parsley to the dough and extend on a flat surface, previously moistened, to straight a rectangular form and let cool. Form 8 rectangular dough pieces that will be the panizas.

3. Then fry in abundant hot oil until they are firm and golden. Eliminate excess oil with absorbent paper and reserve. So that they do not cool it is advisable to save them in the oven at low temperature while the rest of the preparations are finished.

4. For the preparation of bittersweet vegetables, make a light caramel with sugar, vinegar and water. Apart, cut the onions into thick slices and add them to the caramel, mix well and cover with cooking water over high heat until they soften.

5. Cut sliced zucchini and pass them through special flour for rebobes and fry them in hot oil. When they begin to brown, incorporate fresh mint leaves in the pan and leave a few more seconds. Vgilar that zucchini do not soften too much. Reserve.

6. To serve the baker in tower, first place a piece of bread on the plate, cover with onion and zucchini and repeat the process, as if it were a two-story sandwich. Decorate with fried mint and a little candy of the onions, end with a pinch of salt, preferably in flakes.
