Ingredients to make vegetable pakora:
1. To make vegetable pakoras, the first thing we must do is prepare the ingredients. Keep in mind that being a traditional recipe of India may some of the spices, such as Ajwain seeds do not find them easily. If so, don worry, you can do without any of them.
2. Taking this into account, the first step to do the pakoras is to wash the vegetables and cut as follows: the potatoes in canes, the onions in pen and the cauliflower in fine pieces.
3. Next mix all dry ingredients and see adding some water until you get a slightly thick mixture. You can add gasified water if you want a more crispy result.
4. With everything ready, now you just have to soak the vegetables in the previous mixture. Stir well causing all vegetables to be completely impregnated with the tempura preparation.
5. Immediately afterwards, fry the pakoras in hot oil. Try that the oil is very hot and then control the temperature and make a correct cooking. We recommend frying each vegetable separately since each one has a different cooking time.
6. Finally, drain and let the vegetable pakoras rest for a few minutes and serve each vegetable separately or all together, decorating with a pinch of chat masala and fresh parsley, and accompanying it with rait sauce or yogurt sauce and mint.
