This is undoubtedly one of my favorite meals that I share with recipes. On the one hand we have a fantastic Boloñesa type sauce and on the other one of my favorite ingredients, not to say the favorite: the eggplant. An already classic recipe, which we find in all homes, but with a small wink, that of spices, which gives it the special and unique touch and that makes this plate of eggplants stuffed with minced meat and tomato rise to a level higher. Simply wonderful.

Ingredients to make eggplants stuffed with minced meat and tomato: |
2 units of big eggplants 200 grams of minced beef salsa de tomato homemade (enough to cover all the meat with eggplant. By eye) 1 onion unit 1 tablespoon dessert of cumin ½ tablespoon dessert of ground ginger ½ tablespoon of turmeric 1 pinch of ground black pepper (optional) 1 pinch of salt 1 jet of olive oil 1 handful of mozzarella grated to gratin |

Ingredients to make eggplants stuffed with minced meat and tomato:
1. We wash the eggplants and cut them in half longitudinally to obtain two equal halves. We empty them the meat and reserve it.
2. Next we put the eggplant housings in a fountain and bake at 180-200 ºC about 15-20 minutes, until it is tender but not excessively soft.
3. While baked eggplants are baked we prepare the filling. To do this, we will begin by browning a chopped onion with a little oil in a pan.
4. Next we add part of the meat of eggplants (like half) well chopped. Lets sauté.
5. Then we add the minced meat and salt to taste (the homemade tomato sauce carries salt, so we should not pass). We mix well and leave 1 minute.
6. Now its the turn of spices and homemade tomato sauce. You can find the target = _blank rel = NOFOLLOWSALSA of homemade tomato in my blog MINS kitchen. ! It is fabulous! We mix well and let it simmer about 10 minutes. When time passes and we check that the sauce is to our liking we turn off and let stand for a couple of minutes.
7. Next we generously fill the halves. Finally, sprinkle mozzarella grated on top and put the eggplants stuffed with minced meat in the baked, in the grill option, a few minutes until the cheese is brown.
8. When ready, we take out the eggplants stuffed with minced meat and oven tomato, we wait a couple of minutes so that we do not burn and serve. A complete, nutritious and absolutely delicious dish that cannot be missing at any table. I hope you like it!
