Baked eggplants are a very typical dish in the Mediterranean area. The stuffed eggplants are traditional in countries such as Greece, Italy and Spain. Ingredients to make eggplants with tuna and prawns:
1. We gather all the ingredients to make eggplants with tuna and prawns.
2. We take out the meat from the eggplant with the help of a knife, careful not to break the skin.
3. In a pan I fry the onion with a little olive oil for a couple of minutes.
4. Add the eggplant meat, salt and pepper and let it cook over high heat for 3 minutes.
5. While the filling, we put the skin of the eggplant in the oven at 180 ºC with a little olive oil.
6. Add the peeled and chopped tomato, in small pieces, to the sauce for our stuffed eggplants. We put a little more salt if necessary.
7. We add the tuna, which we have previously drained, along with the peeled prawns. If you do not use cooked prawns, remember that they have to cook a little with the filling.
8. We put a whore of cream in the filling of these eggplants in the oven and mix well.
9. We remove the skin from the oven eggplants and fill them with them with the help of a spoon. We put some breadcrumbs on top and put them back in the oven at 200 ºC until they are gratin.
