1. The first thing we must do to make this recipe for stuffed eggplants without cheese is to wash the vegetable well and then cut the eggplant in half throughout. Then, to the pulps of these halves we will make some cross -shaped cuts to penetrate the oil and salt.
2. We place the halves in a fountain, add the oil and salt, cover with film paper and introduce the eggplants into the microwave for cooking for 10 minutes at maximum power. After this time, let cool and remove the pulp. We reserve the peels on the one hand and the pulp on the other, the latter well chopped.
3. To start preparing the eggplant filling, we heat two tablespoons of oil in a pan and, once hot, sauté all well chopped vegetables for 6-7 minutes.
