Leech stew recipe

We wash the leeks, we cut first into four parts, along, and then in small pieces.

Ingredients to make leeks:
400 g of potatoes
2 thick leeks
2 eggs (or egg white)
3 spoons of butter
4 slices of bread

4. Derret the butter in a pan.

5. We fry bread.

6. We retire and reserve.

7. We pour 2 liters of water in a casserole.

8. We leave and introduce the potatoes and leeks.

9. Cook for 30 minutes.

10. We separate the whites from raw yolks.

11. Beat the yolks in a bowl and add little by little 1 ladle of potato cooking liquid.

12. We incorporate into the casserole stirring with a rod or a blender.

13. We serve in a soup and accompany the fried bread.
