3. A day before: soak the chickpeas and beans, in two different containers.
4. The cooking day of our cooked in LalÃn, you have to put on the fire, preferably in a firewood kitchen, a pot with cold water and a piece of smear. Throw the Lacon and cook between 2 hours and 2 and a half hours, foaming during that time to remove the impurities.
5. At the same time, incorporate the head and the rest of the pork and check its cooking.
6. Put another pot to the fire, also with cold water and another piece of smear and throw the veal and chicken meat.
7. Let cook for about an hour. Take advantage of that cooking time to leave salt.
8. Now you have to put a third pot to the fire with water to overflow, you have to use the cooking water of the meats after straining it and throwing the chickpeas and beans in it, leaving them cook for an hour.
9. Add the sausages during that time and remove the fat little by little.
10. In a fourth pot, put the grelos to cook in the water of the meats, after straining it, and doing the same with the potatoes in a different pot, letting they cook until they are tender.
