Ingredients to make stuffed squid:
1. We start the recipe by cleaning the squid and discarding the skeleton. We reserve the tentacles and fins for the filling.
2. Now we are going to prepare the squid filling. It is very simple, we crush the tentacles, the fins, the hake, the peeled and chopped garlic and the parsley. We crush well until you get a paste.
3. Lets cook two eggs, let cool, peel, chopped and add them to the previous mixture. We peel a dozen fresh prawns, we cut them into dice and incorporate them too. We beat an egg, add salt and pepper to taste and add it to the preparation, mix well. The heads of the prawns are reserved for the sauce.
4. We fill the squid with the previous mixture and close them with a stick to prevent it from being cooking them.
5. We pass each of the squid by flour and fry them in abundant hot oil. Once fried, we reserve them while preparing the sauce.
6. For sauce, chop the onion, tomato, two garlic cloves and parsley. We put a pan with oil to heat and fry these ingredients. We also add the heads of the prawns, salt and pepper.
7. We flame with a little brandy, pour two glasses of water and let boil for 15 minutes. After this time, we remove the heads from the prawns and pass the sauce through the Pasapurés.
8. We put the squid in a clay casserole, add the previous sauce and let cook for 20 minutes over medium-low heat.
9. After this time, we will have our stuffed squid ready to eat. We accompany them with cooked rice with a little salt and pepper.
