1 teaspoon of achiote
1 piece of onion
1 clove of garlic
1 jitomate
1 piece of pineapple (optional)
1 pinch of ground cumin
1 pinch of oregano
4 chiles guajillo clean without seeds or veins
1 cup of grated manchego cheese
Tortillas of corn
vegetable oil
ADDITIONAL CHARACTERISTICS: Average cost, nothing spicy, fried,

Ingredients to make shrimp quesadillas:

1. To start the shrimp cheese recipe, in a pot with enough water, cook the peppers until they are softened. Do not forget to clean the peppers removing the seeds and veins, although if you want them to pike you can leave them.

2. When they are softened, liquefy the peppers with a piece of onion, a clove of garlic, a spoonful of achiote, a tomato, a pinch of cumin and oregano and, optionally, some pineapple pieces. Blend all this for at least 3 minutes at medium speed.

3. When you have the sauce, reserve it for a moment while cleaning the shrimp. You can chop them or leave them whole. Place them in a container, add all the sauce, mix and let the shrimp be marine for 10 minutes.

4. After marinating time, heat a pot or pan and cook the marinated shrimp for 6-8 minutes. Check the taste and if necessary seasoning with a little salt and pepper to taste.

5. Now it only remains to build shrimp quesadillas. To do this, heat the omelette so that it does not break when folding it, add a little of the shrimp and some Manchego cheese. You can secure them with wooden sticks and thus prevent them from opening at the time of frying them. You can prepare your own dough for quesadillas with this simple recipe.

6. In a pan with enough hot oil, fry the quesadillas until browning them on both sides. Then, let them cool slightly on absorbent paper to remove excess oil.

7. Serve the shrimp cheese cheese with cheese removing the wooden sticks. You can serve them with collapse, lemon and the sauce that you like the most, such as peanut sauce with tree chili or macha sauce.
