2. Get rid of the heads of the tails. Remove the meat from the interior of the heads, place them in a jug and crush them with an electric blender. Strain the sauce on a pan, put it on the fire and boil. Pour a splash of raspberry vinegar, mix well, remove from heat and pour a splash of oil.
