Mussel recipe for sea mayonnaise

For 4 people ::
1, 500 Kg. Of mussels
1 dl. of dry white wine
1 lemon
2 stages
¼ liter of mayonnaas
chopped chives at will

3. Remove them, filter the juice.

4. Add the white wine, the lemon juice, the shallots passed through the blender and let the juice reduce until you obtain only one soup tables.
