We boil the whole potatoes and with leather in boiling water with salt for about 30 minutes.

2. We take them out of the hot water, let them temper a little, peel them, cut them into slices and place them in a glass fountain suitable for the oven.
3. We clean the outside of mussels in running water.
4. We cast the liquid that mussels have released and pour into a pan, along with the glass of white wine, the very finite chopped garlic, a little salt and pepper.
5. When the sauce begins to boil, add the fried tomato and let it cook for 5 minutes (we can add a small chilli if we like the sauce to be spicy).
6. We incorporate open mussels and only with the shell where the meat part is to the sauce and let it cook for 2 minutes.
7. We place the mussels on the potatoes with part of the sauce and introduce 5 minutes in the oven at 180ºC.
8. We take and serve at the source of the oven with the rest of the sauce above.
