Gambas croquettes recipe

Wash the prawns and scald them in hot water with a little aromatized salt with the bay leaf and lemon slice. Drain them, cut them into pieces and reserve them.

100 gr. of peeled prawns
1 slice of lemon
1 laurel leaf
50 gr. of grated cheese
2 eggs
1/4 liter of milk

flour
butter
breadcrused
oil
salt
pepper

2. In a saucepan, melt the butter, add, stirring, with a tablespoon of wood, 75 gr. of flour and, little by little add boiling milk, without stopping stirring.

3. Cook it until you get a dough that separates from the walls of the pan.

4. Outside the fire, incorporate the prawns, an egg yolk, salt, pepper, nutmeg and grated cheese.

5. Pour the dough on a plate and stretch it until it is about 2 cm. of thickness.

6. Let cool. Cut it into squares. Back them with flour, beaten egg and breadcrumbs. Fry in very hot oil.

7. They can freeze, without frying, and use them when they need.
