Ingredients to make vegan carbonara sauce:

1. Here we have the ingredients for this white vegan sauce. Instead of the traditional classic carbonara bacon, we use Tofu, although you can also use Seitán. For this vegan recipe we will resort to a vegetable milk: I have put it almond, but it can also be rice or oatmeal. The Italians will put their hands to the head, but yes, in this recipe of Carbonara we use milk, although surely it goes against all the commandments of the Italian cuisine. The cornstarch does not come out in the photo, but it will probably do well to thicken the sauce a little.





2. In a pan heat a splash of oil and fry the onion, well chopped.





3. After five minutes, when the onion is already beginning to be at its point, we add the chopped nuts and the tofu, also chopped. We remove and fry everything together for a couple of minutes.





4. Next we add the vegetable milk, and increase the fire to take it to a boil. You can add a teaspoon of cornstarch if you prefer the vegan sauce somewhat thicker. It is time to add salt and nutmeg. We leave it at least five minutes, stirring continuously.





5. You could serve the vegan carbonara sauce, but I have preferred to pass it through the blender, to get a finer sauce.
