The gastronomy of the Canary Islands stands out for its rich mojos – sauces with which the meals are accompanied. There are different varieties of Canarian mojo: coriander green, red, gomero almogrote with goat cheese, fried mojo, etc. The recipe that I bring to recipes is a variety of red mojo that is called the Canarian boiled mojo. Its preparation differs from that of the other mosses in the cooking process, as the name implies, and is prepared based on red pepper, garlic, onion, bread, paprika, oil and vinegar. This boiled red canary mojo is exquisite with any type of meat, fish and, of course, with the famous wrinkled potatoes.

Ingredients to make red -boiled canary mojo: |

Ingredients to make red -boiled canary mojo:
1. Trocea the slices of bread. It must be hard bread of the previous day and you have to cut it into very thick slices about 3 centimeters thick.
2. Heat a pan with a jet of oil and fry the chopped bread for 2-3 minutes stirring so that it does not burn.
3. Place the fried bread in the electric blender. Add the rest of the ingredients and crush until a homogeneous and soft mixture is.
4. Pour the mixture of the red Canarian mojo in a saucepan and heat it until it breaks to boil. Lower the fire and cook for 2-3 minutes stirring occasionally.
5. Leave the red canary mojo boiled cool and serve it with wrinkled potatoes, meat or fish.
