Light white sauce recipe

I am not vegan or vegetarian, but I love trying and experimenting in the kitchen with all kinds of recipes. Therefore, I have decided to elaborate this incredible vegan white sauce, a lighter than the traditional but equally delicious option. To do it I have used vegetable butter and vegetable milk, although throughout the recipe I am giving options to replace the ingredients if they do not have at home. 1½ tablespoons of vegan butter
1 tablespoon wheat flour
1 cup of vegetable milk or skim

Ingredients to make white sauce light:

1. To start preparing the White Light sauce, we melt the vegan butter in a saucepan, add the flour and constantly stir with a wooden spoon or manual rods, for approximately 2-3 minutes over medium heat. I have used homemade avocado butter, but coconut butter and even peanut butter can also be used. The important thing in any of the cases is that it is homemade to ensure that it does not have added sugars and is light.



Trick: If you are celiac, you can replace wheat flour with rice flour or cornstarch.





2. We add coconut milk, which must be at room temperature, and continue mixing with the manual or balloon rod making small circular movements for 3 more minutes. Again, milk can be changed to another vegetable, such as oat milk or rice milk, as well as skim cows milk. It is very important not to use whole milk for the elaboration of the White Light sauce. In the case of vegetables, we recommend using them homemade or, if bought, without sugar.





3. We incorporate the spices to taste, which in my case have been salt, pepper, nutmeg and nutritional yeast. We keep stirring to integrate them into the vegan sauce.



Trick: Personally, I do not recommend eliminating the nutritional yeast of the recipe, since, in addition to being rich in nutrients, it brings a delicious taste to the sauce.





4. We cook for 1 more minutes and remove it from heat or use it to season any dish we like. For example, this white sauce recipe is ideal for pasta, so we can boil separately and while the sauce is cooked integral spaghetti and, once the sauce is ready, we add them to the casserole. Likewise, we can prepare cauliflower in white sauce or, if we do not follow a vegan or vegetarian diet, paste with shrimp in white sauce.
