The red mojo is a pepper and chill -based sauce that serves to eat with all kinds of foods. Also known as Mojo Picón, for its spicy flavor, this sauce is original of the Canary Islands, in Spain and is one of the most famous recipes in the entire place. Canarian red mojo ingredients:
1. Like the famous green mojo, making the Picón or Canarian red mojo is very simple. The first step will be to prepare the ingredients, for this, clean the pimient piconas eliminating the seeds and veins and shovel and crushing the garlic.
2. Then make a paste crushing garlic with cumin, powdered paprika and salt. You can use a mortar or a blender, move well until a homogeneous paste of soft texture.
3. To finish the preparation of the red mojo, add the piconas piconas to the mixture together with the vinegar and when they have been completely integrated, add the oil slowly while shitting. Try and correct the seasoning if necessary.
4. Keep cold and enjoy roasted potatoes or any type of grilled meats or vegetables. The Picón Mojo has to be spicy, if you do not get the pimient piconas you can use chillies, although red paprika can also be used.
