Ingredients to make vegetable salad with mango: |
1 can of asparagus tips 50 gr. of small raisins 2 cogollos de tudela 2 mangos 1 median carrot 3 endibias 1 apple 1 slide of emmental cheese for the sauce :: 1 egg 1 tablespoon of mustard the juice of half lemon 2 dl . of olive oil 1 skim yogurt 2 tablespoons of concentrated tomato salt |
Ingredients to make vegetable salad with mango:
2. Drain the asparagus.
3. Peel the apple, rub it with lemon so that it does not darken, remove the pepitas and cut it into dads. Wash and chop the buds in Juliana.
4. Cut the cheese into squares.
5. Peel and cut the mangoes into small segments, book on a plate.
6. Put all the ingredients in a salad bowl and add the raisins.
7. For sauce: work the egg in the blender, with lemon juice, salt, mustard and oil.
8. Add the concentrated tomato and 3 tablespoons of the yogurt, beat a little more until you get a pink, light and soft sauce.
9. Pour the sauce in the salad bowl and remove.
10. Wash the endives and remove the leaves, cutting the longest. Introduce them standing in the salad (at the edges of the salad bowl). Cover the center with the pink -shaped mango segments.
