Fresh endibian salad recipe

First in a bowl we prepare a vinaigrette. We squeeze the lime and add to the bowl, add the vinegar, the oil and mix well. We reserve.

150 ml of extra virgin
endibias olive oil
8 figs dry

2. We remove the leaves from the endive and wash them well, dry them with a clean kitchen cloth.

3. Next we are placing the leaves in a fountain.

4. Then we cut the figs into fine slices, 2 per person, peel the oranges and cut them into small pieces.

5. Above each endibia sheet we put a slice of fig and in the middle of the orange.

6. Then we spread the nuts.

7. We season with citrus vinaigrette and season with a few Maldon salt crystals.
