CAP-Pota warm salad recipe

We will scald the tomatoes in boiling water, we will peel them, cut into four pieces and remove the seeds.

Ingredients to make a lukewarm salad: Pota:
1 kg. cap-i-poet (veal, already cooked)
3 kg. tomato (mature)
1 you. Escarola
8 ud. cherry tomato
2 or 3 ud. garlic
laurel
tomillo
salt
pepper
olive oil
vinagre

2. We will pass them to a baking plate, we will add chopped garlic, bay, thyme, salt and pepper and bake at 90º for half an hour.

3. We will cut the cap

4. Then we will place them in a rectangular mold by interspersing them with tomato layers to fill completely. We will put it in the fridge to cool.

5. We will distribute the escarole in four trenches and we will dress it with salt, pepper, oil and vinegar.

6. We will unmold the cap
