Ingredients to make Bethlehem salad:
1. To start preparing the Bethlehem salad, prepare the vegetables. To do this, peel and cut the onion into cubes. Also lava and cut in cubes the eggplant and the peppers, removing the white ribs and the seeds.
2. Salte the onion with 1 teaspoon of oil or vegetable dew and the high heat. When you begin to brown, add the peppers.
3. If the vegetables begin to stick, lower the fire halfway and add 1 teaspoon of water. When it evaporates, add another teaspoon and repeat this process as many times as you want. The more times you repeat it, the more cooked and sweet the vegetable will be.
4. Once the desired point is reached, remove the vegetables and in the same pan jumps the eggplant. The idea is to seal it on all sides so that it is not aged. However, be careful not to burn the pulp or its peel, since, otherwise, it will give a bitter taste to your Bethlehem salad.
5. Once the eggplant is browned, add the onion and peppers. Condimate them to taste and, with the low heat, jump them a few more minutes to take flavor; approximately 5 more minutes.
6. While vegetables are cooked, hydrate the raisins in hot water. You can also toast the chestnuts of Cajú (anacardos) in a pan or in the oven at 160 ºC for 10-15 minutes.
