Vegetarian Gofio Escaldon Recipe

The scalded scaldon or scalded gofio is a typical dish of the Canary Islands simple, fast and economical. The scaldon consists of a mixture of gofio (ground roasted cereals that can be millo, wheat or cereal mixture) and broth. Gofios scdy is usually served with a Canarian pot or to accompany a stew. It is a very blunt dish and, therefore, perfect for cold days. Usually in the recipe the meat or excess fish broth is used from the preparation of the pot, some cooked or stew. If the broth is reused, vegetable pieces of the same pot or cooked are usually added. Above it is usually served with cut -cut red onion and grocery green mojo. But this time I am going to use a vegetable broth and prepare a great scaldon of vegetarian/vegan gofio in recipes.

2 cups of vegetable broth
5 tablespoons of gofio
½ onion
5 tablespoons of Cilantro green mojo

Ingredients to make vegetarian gofio scdy:

1. Pour the hot vegetable broth into a deep container.

2. Little by little add the gofio stirring vigorously with a fork so that lumps are not formed. Keep with the process until you get a homogeneous, creamy and thick mixture.

3. Cut the onion into pieces and serve the Canarian Gofio scald.
