Ingredients to make shrimp in rice: |
1 pound of early shrimp 1 pound of white rice 1 can of coconut milk 1 small onion unit minced 1 small green pepper unit 1 bunch of coriander 1 pinch of salt, pepper and achiote 1 cup of water (240 milliliters) 2 teaspoons of vegetable oil 2 teeth of well minced garlic 1 teaspoon of cooking butter |

Ingredients to make shrimp in rice:
1. In a pan put the oil to heat. Meanwhile, we wash the rice a little to take part of the starch and drain it in a strainer. Then we add it to the pan with oil and fry until it is well known. We reserve.
2. In a median pot we add the butter and let it melt a bit, then add the garlic and onion and fry a few minutes without burn. Add the shrimp to the pot and continue with the sauce. Then we add the green pepper and once everything is sauteed, we incorporate the water.
3. When the boiling breaks the rice already washed and seasoned with salt and pepper to taste, if you want a more intense flavor you can add an envelope of shrimp consommé.
4. When the preparation begins, start to boil again add coconut milk and let rice be cooked. If you see that the water is about to be consumed and the rice is still hard you can add one more water cup. You can put a little bit of Achiote to give it color. Chop the coriander and add to the pan, that will give you more flavor.
5. Let stand for a few minutes and serve the shrimp in rice, decorate with a slice of lemon and accompany with a fresh salad with mushrooms if you want. Bon Appetite!
