500 grams of trigueros asparagus 1½ liters of vegetable broth 65 grams of butter 3 tablespoons of olive oil ½ onion unit chopped 1 unit of minced shalot 350 grams of rice for risotto (I use carnaroli) 1 pinch of newly grated salt Parmesano |

Ingredients to make triguerous asparagus risotto:
1. Before getting to work, we let all the ingredients ready to ensure that we do not miss anything.
2. Now that we have everything ready, we take the asparagus and remove the hard parts, reserve the yolks.
3. We take a casserole and put enough water to heat with a pinch of salt. When it boils, add the asparagus and cook them for 10 minutes.
4. After time, we remove the asparagus, drain them and chop them as seen in the photograph.
5. Apart, we heat the vegetable broth. Meanwhile, we take a pan, heat 15 grams of butter and fry the yolks of the asleep asparagus. We cook for 5 minutes, stirring occasionally. Then, we retire and reserve them.
6. We take a casserole and melts 25 grams of butter with olive oil. Once hot, add the onion and sauté for 5 minutes over low heat, stirring with a wooden spoon.
7. We add the rice and the shallot and fry while stirring, until the rice grains have completely impregnated the butter.
8. When ready, we incorporate chopped asparagus and stir. Then, we add a hot vegetable broth and continue moving until the rice has absorbed it.
9. The cooking of the asparagus risotto will take us between approximately 18 and 20 minutes. Once cooked, add the remaining butter and stir to integrate it.
10. We heat the yolks of the asparagus and serve the risotto sprinkling Parmesan cheese to taste and decorating with the yolks.
