Ingredients to make rice with snails:
1. Here we have the ingredients for this caldoso rice with snails. The most important thing is to have many spices, if possible fresh, to cook the snails and that are delicious.
2. First we boil the snails in the vegetable broth, and add the rosemary, the peppermint and the leftover (which is spicy). In this way there will be a really tasty broth. These frozen snails will need about 30 minutes to be ready.
3. While the snails are cooked, in a saucepan with a little oil we put the chicken meat and onion, preferably chopped.
4. Add the tomatoes, well chopped. We leave everything a few minutes.
5. By then the snails will be ready. We take them out and remove them, and strain the broth to discard the spices. The broth we pour it into the meat and tomato saucepan.
6. We continue the elaboration of our Spanish rice recipe with snails by adding the snails already cooked to the saucepan, along with the rice.
7. We also add the saffron and the black pepper, and as the rice drinks the broth we will add more. We can do it very or little caldoso, according to our preferences. For the rice we will follow the cooking tips of the brand chosen, normally with between 15 and 20 minutes it is enough.
8. Here we have the result: a magnificent caldoso rice with chicken and snails.
