Rice recipe with riñoncitos

Remove the skin from the riñoncitos and put them to macerate ½ hour in a container with 200cc of water, 100cc of vinegar and thick salt.

Ingredients for rice with riñoncitos:
250g of white rice
500cc of meat broth
2 or 3 Kidneys of veal
1 rack carrot
1 chopped onion
1 Echalotte chopped
100cc of olive oil
25 g of butter
100cc de cognac
1 teaspoon of rosemary

1 teaspoon thyme
200cc of white wine
200g of milk cream
