Rice recipe with coastal coconut

Coconut rice is a typical dish of the Colombian Caribbean coast. Ingredients to make rice with coastal coconut:

1. Before making this recipe, the first step is to enlist all ingredients. Keep in mind that for this Colombian recipe you must use natural coconut.





2. Split the coconut very carefully, with the help of a hammer if necessary. Remove the water, peel it, grate it and blend it with two cups of hot water.





3. Then strain the coconut milk very well and reserve it.





4. Add the two cups of coconut milk to a pot, cook over low heat until they break boil, add sugar and salt.





5. Finally add the rice and cook over medium heat until coconut milk evaporates. Cover and continue with cooking over very low heat for 30 more minutes.
