Ingredients to make rice with clams and prawns:
1. In the first place we must clean the clams, we put them in water with a little salt and leave them at rest so that they release the sand. I usually put them in a strainer inside a container with water so that the strainer does not touch The floor of the container, in this way the sand that is releasing will be deposited in the background. 2. Meanwhile, we peel the prawns and remove the heads. We do not throw anything. The prawns reserve them until you have to put them in the rice.
3. The shells and heads are used to make a broth. Then, we put them in abundant water with a little salt and some vegetables, such as onion, leek and parsley. When we are ready we pass it through a strainer and reserve. I do the broth with vegetables but in these cases I do it alone, adding some spine or head that has in the freezer.
4. In a low casserole we put some oil and fry the garlic and onion chopped along with the bay leaf. When the onion is tender, we add the red pepper along with the tomato and continue stirring for about 5-10 minutes. When the sauce is made, add the drained clams and sprinkle with a little wine. While removing, we wait for alcohol to evaporate and open the clams to throw the rice and season with a pinch of ground cumin.
5. We saute the rice well and add the reserved fish broth along with turmeric or dye. We try and rectify the salt if necessary, add a little ground white pepper and let the rice be Hard
