Ingredients for rice with chicken and vegetables:
1. We gather all the ingredients to prepare rice with chicken and vegetables. Apart from the vegetables we have used you can add others such as eggplant or even natural tomato.
2. We boil the rice in plenty of water with a little salt. To make an idea, the ideal amount of rice per person, when it comes to dry rice, is 80-100 grams. I usually measure it in handfuls but if you have a balance we recommend that you weigh it. Once the rice is boiled, we drain it, cool with water and reserve.

3. We cut the vegetables into squares as indicated in the image. In the case of carrot and zucchini, we peel them previously.
4. In a pan we put 2-3 tablespoons of olive oil and we add the vegetables in the following order: onion, peppers and carrot. Before incorporating the following vegetable we let each one cook about 3 minutes.
