Ingredients to make Quinoa vegan paella:
1. We gather all the ingredients to prepare the Quinoa paella with vegetables.
2. To begin, we make a stir-fry with the chives and the red pepper cut into small squares. Let cook 4 minutes over medium heat. Meanwhile, we cut the green beans into pieces of about 3 centimeters and boiled them in water for 5 minutes. After this time, we drain and reserve.
3. Add the peeled and cut carrot of the same size as the pepper, and the asparagus also in pieces. We salt and pepper and cook another 5 minutes.
4. We incorporate the green beans and the washed quinoa, and mix well so that they integrate into the sauce.
5. It is time to incorporate the vegetable broth into our vegetarian paella. We put twice the broth than Quinoa and let cook over low heat for 20 minutes.
Trick: If you see that the paella runs out of liquid you can add more vegetable or water broth.
