Ingredients to make fried rice with Kimchi or Kimchi Bokkeumbap:
1. The first step to make this fried rice with Kimchi or Kimchi Bokkeumbap is to cut the scallions. On the one hand we cut the white part into fine slices and on the other, the green part into diagonal slices.
2. Next, we peel and chop it and cut the kimchi col in pieces with a scissors.
3. Then in a wok, or failing that in a pan, we put the vegetable oil to heat over medium-high heat and when it is, we put the slices of white onion and the chopped garlic. We sauté the vegetables stirring constantly until they begin to brown.
4. Once the vegetables of fried rice have been brown, add the kimchi in pieces and the tablespoons of its juice, and cook everything for a minute.
5. Then we add the soy sauce and the enforcement and continue cooking the set until the kimchi begins to soften, a sign that it is well cooked.
Trick: If the kimchi collides begins to hit the bottom without being soft, we can add a tad of water or its juice.
6. When this passes, we lower the heat and add the cooked rice, and stir well to integrate all the ingredients of fried rice with Kimchi. We cook everything for a few minutes preventing the ingredients from sticking at the bottom of the pan.
7. While the recipe is cooking with Kimchi, we fry the eggs in an non-stick pan with enough oil until they are very fried and reserve them.
8. Next, we sprinkle a pinch of ground black pepper and half of the green part of the onion we have cut (the rest will serve to decorate the final dish), and remove everything again.
9. Finally, we serve the fried rice with kimchi in boles, with a fried egg on top of each one and sprinkling a little of the green part of the cut onion and voila!
