Cuscous recipe with vegetables and chicken

Ingredients to make couscous with vegetables and chicken:

1. The first thing we have to do to prepare this delicious dish of Cuscous or Cous Cous with vegetables is to prealist the ingredients. To do this, we will begin to chop the chicken by eliminating the bones. I have used thighs because they have more flavor, but you can use breast if you prefer.





2. Next, cut the onion and feather tomato, and the red pepper in small pieces as well as garlic. Reserve separately.





3. Now its the turn of carrot and pumpkin. Cut the carrot into slices and chop the pumpkin as seen in the photo. Remember that this recipe of Cuscous you can do it to taste adding more or less amount of the vegetables that you like the most.





4. Short in slices the leek and zucchini, first in half and then sliced. The reason for this type of cuts is that it facilitates the uniform cooking of the entire set of vegetables and that when eating, the pieces of a bite remain.





5. Once we have all the prepared vegetables we will start with the cooking of the sofrito for cuscous. First, place a large and tall pot (it can be a pressure or express pot) with a stream of oil to the fire and sauté the chicken pieces. Seal the meat and reserve separately.





6. In the same pot where you have sealed the chicken, sauté the onion along with the pepper and garlic, do it over low heat for about 5 minutes.





7. After these first 5 minutes, add the leek to the sauce and leave again for 5 more minutes. Then add the carrot, wait 5 minutes and add the zucchini. Let it cook all 5 minutes again and add the pumpkin last. See everything with a wooden spoon.





8. Mix the condiments in a separate container and when they are well mixed, the vegetable safrito for couscous season with the spices.





9. Meanwhile, see the couscous. To do this, in a separate container, mix the couscous with half a glass of hot milk. Let the semolina absorb all the liquid, this process will take about 2-3 minutes. You may need to throw more or less milk, the important thing is that the cuscus absorbs it and swells.





10. Go back to the sauce and add the chicken along with the tomato. Stir everything well so that the chicken is impregnated with all flavors and leaves cooking over low heat.





11. The passage that comes next may seem complicated, but it is not, so pay attention. If you have a cuscusera or steamer cooks the semolina as indicated by the instructions, otherwise: recover the cuscous and separate the grains disarming the lumps that have been formed when mixing with the milk, and place it in a strainer crushing the entire surface. Then, place this on the pot where you are cooking the vegetables and lid. Leave in the fire in this way for about 5 minutes. Guide with the photo.





12. After 5 minutes, couscous replaces in the container where it was previously and crumbles the grains eliminating the lumps, the semolina must be loose. Then add the butter and mix well.





13. Apart, heat another little milk with a little salt and pour the liquid into the cuscous, letting everything be impregnated. Like before, you may need to throw more or less milk, the important thing is that couscous absorb everything. Returns the strainer and the pot for 5 more minutes.





14. Check that the pumpkin is soft and this nutritious and healthy plate of couscous with vegetables and chicken will be ready.
