Ingredients to make rice to curry with chicken and vegetables:
1. Here we have the ingredients for this rice with chicken to curry. You can use the vegetables you have around the fridge. As for the broth, only a part of everyone I used.
2. We wash the vegetables and cut them into reduced pieces, of similar size. We throw them into a pan with extra virgin olive oil already hot, and make a stir -fry. We will need at least 10 minutes, over medium heat, and stirring occasionally.
3. When the vegetables are already beginning to be ready, we will add the chicken, which we have previously chopped with the help of scissors and we have splashed. We stir well and let the chicken take color.
4. Next, we add the rice and let it also take some color. We add the curry to taste (I was generous), a little salt, and then add the chicken or vegetable broth, preferably already hot.
5. We will follow the instructions of the rice brand in terms of cooking times. In my case, I had it 20 minutes. I was adding broth according to the rice, I drank it, and also retouching flavors with the curry, salt and black pepper.
6. Here we have the curry rice with vegetables and chicken ready to serve. I left it quite calm because part of it kept it in a lunchgiera for the next day.
