Congri recipe (beans rice)

Wash beans in a strainer with running water until the water comes out clear.

Ingredients to make Congri (rice with beans):
180g of dried black beans
2 liters of water
21/4 teaspoon of salt
1 sprig of fresh thyme minced fine
1/2 Pico Picado Fino
3 tablespoon of vegetable oil
a piece of lean bag of salt pork cut into Dice small
2 teeth of minced garlic
1/4 of a short -and -sized red chilli

Ingredients to make Congri (rice with beans):

2. deposit them in a large pot with 4 cups of water, 1cucharadita of salt, thyme and half of the green pepper.

3. Take everything to boil over high heat, lower the fire and let it boil 3 hours or until the beans are tender.

4. Add more water if it evaporates too much. Drain the cooked beans and reserve the water to boil the rice.

5. Remove 1 spoon of beans and crush them in a mortar until you get a fine paste.

6. In a large pan with cold hot oil the pork until it is crispy and has released the entire fat.

7. Remove the meat from the fire and let it drain on paper paper.

8. Reserve it, give the garlic in the pan, the rest of the green pepper, chilli and onion 5 minutes stirring constantly.

9. Incorporate the puree of the beans, the remaining beans and the pork.

10. Lower the fire and let it boil everything without covering about 10 minutes.

11. Pass all these ingredients to the pot with the water from the beans and add the rice, 1 1/4 teaspoon of salt and the black pepper.

12. Take everything to a boil while still removing all the ingredients for mexclar, let it boil for 20 minutes or until the rice is cooked and the liquid has evaporated.

13. Try it, rectify salt.

14. It is used immediately.
