The bean with a pig is a Yucatecan recipe, from Mexico, but the ingredients and the preparation that will be seen below is a mixture with Venezuelan cuisine. 1 cup of rice 500 grams of caraotas ½ kilogram of pork ½ onion unit ½ red paprik Pinch of oregano ½ onion unit Pico de Gallo: 1 Rama of coriander 2 Tomato units ½ onion unit |

Ingredients to make a pork bean:
1. To make the caootas, let them soak overnight. The day of the preparation, place in a pot with water until it covers and cook until they are soft. To make them faster they can be done in a pressure cooker or express pot.
Trick: Black beans are called Caraotas in Venezuela and other Caribbean countries
2. Meanwhile, all the vegetable is finely pica. Reserve separate half of the onion and tomato to make a pico of rooster. The rest will be used for the caootas. You can use half red and half green paprika or an entire paint, it depends on what you have at home.
3. When the caootas are almost ready, the vegetable and minced meat are added. Remove everything well and season with the spices and the Apazote, correct the seasoning if necessary. The latter is an aromatic herb that is not found everywhere, so if you do not matter.
4. When it starts to boil, separate two cups from the broth from Las Caratos and reserve. Meanwhile, continue with cooking until they are at ease and the meat is completely made. The caootas can be left with a very liquid or thicker broth, in the two ways are delicious.
5. With those two broth cups prepare the rice. You can make a stir -fry with onion and garlic, add the rice, a little salt and the broth, if some caraota grains slip it, it doesn matter. Let it boil over low heat and turn off when the rice is ready. It must be black.
6. To do the pico de Gallo, mix the tomato, onion, coriander and lemon juice. All finely chopped with a little salt.
