1. Boil rice (if possible steamed). Mix in a cup, vinegar, sugar, saké and salt.

400 g. of rice 3 tablespoons of rice vinegar (white vinegar) 1 tablespoon of sugar 1 tablespoon of salt 1 tablespoon of saké |

2. In a bolcolocar the still hot rice and pour the seasoning on top. Mix well.
3. 2. Take portions of rice and make elongated meatballs crushing them with their hands.
4. Put in a bowl and cover with the fish fillets (see preparation of the fillets, in the previous recipe: Nigiri Sushi).
5. Serve accompanied with soy sauce.
