Strawberry Salmorejo Recipe

Within the cold soup list, the Andalusian salmorejo is one of my favorites. This great creation, typical of southern Spain is the best remedy against the heat of summer. Well, to give an original touch to the traditional recipe of the Salmorejo Cordobés, in the recipe that we show you below, lets prepare a salmorejo of strawberries. Strawberry salmorejo ingredients:
1 kilogram of maturo tomato
300 grams of strawberries
½ glass of olive oil
1 jet of apple vinegar (optional)
1 pinch of salt
3 slices of bread
1 pinch of sugar

Strawberry salmorejo ingredients:

1. We started by placing all the ingredients at the work table. Lave the tomatoes and strawberries very well, removing the part with the green leaves to the latter. Reserve some entire strawberries for the decoration of our cold salmorejo soup.

2. We start by peeling and chopping the tomatoes a little. We also chop the strawberries and garlic. When we have it, we place all this in the glass of the blender along with the oil, the vinegar and the chopped bread. We crush everything until you get a homogeneous mixture. You can use any type of bread with crumb, whether village bread or the classic bread.

3. Check the seasoning and correct adding salt and sugar to level the acidity of the tomatoes. Then see water to taste until strawberry salmorejo has the texture you prefer, more or less thick. Crowd the taste with salt and pepper if necessary.

4. Finally, we pass our strawberry soup through a strainer to remove any grumo that could have been. Then, we reserve in the fridge until serving.

5. Strawberry salmorejo can be served as an appetizer in sucks or as an incoming in larger portions. As you can see, it is a very simple and perfect recipe for heat days, since it is a super refreshing cold soup. You can decorate with cooked egg, crispy ham, picturested or simply fresh strawberry segments.
