1 kilo of bread from the previous day
1 glass of olive oil
3/4 kilo of mature tomatoes
2 cloves of garlic
1 copita of wine vinegar
salt to taste

2. The classic way of doing so is in mortar or dornillo (kind of wood mortar) and in case of wanting to do so, place the salt first, then the peeled garlic.

3. Go shining with the mace so that the garlic breaks well, then add the tomatoes, cut to tacos and continue to die, add the bread and the vinegar.

4. While slowly adding the oil to get a good mixture, then pass it through the Pasapurés (Chino).

5. If on the contrary you opt for the most modern way, put the oil, bread, tomatoes, peeled garlic, vinegar and salt in the blender.

6. Beat for a few minutes, until you get a homogeneous mixture. Pass through the Pasapurés, to remove the skins and cucumber from the tomato.

7. Add very cold water until you get the desired texture and rectify salt.
