Ingredients to make onion and thyme soup:
1. We gather all the ingredients to make the onion and thyme soup. In this case we have used purple onion, but this recipe is originally made with white onion.
2. In a pot we melt the butter and add the onion cut in julienne. Let it cook over low heat with a pinch of salt until the onion releases all its water.
3. When it is poached, we add the water and lead to a boil. We cover and let cook for 20-30 minutes over low heat. We rectify salt if necessary.
4. This step is optional since we have decided to prepare an onion soup with egg. So, while the previous preparation boards, we make the poached egg. In a bowl we put a layer of film paper, we cascol the egg, we put some salt, we close it as if it were a bag and put it in a pot with boiling water during 4 minutes.
