Oliaigua Menorcan recipe

The Oliaigua is a traditional soup of the kitchen of Menorca in Spain. A quick soup to prepare and especially very economical, which the old peasants of the area took.

Ingredients to make Oliaigua Menorquina:
5 units of mature tomatoes
1½ units of onion
2 cloves of garlic
1 laurel leaf
2 units of green peppers
3 tablespoons of olive oil
1 pinch of salt
1 piece of bread from the previous day
1 pinca of parsley

Ingredients to make Oliaigua Menorquina:

1. Take a casserole, add oil and heat it. When the oil is hot, the garlic and onions are pointed, all chopped.

2. When the previous ingredients are halfway, the cut pepper is added, the bay leaf and the parsley to aromatize the Spanish soup. The tomatoes are peeled, they are cut into pieces and, when everything is poached, they are added to the casserole. The heat is lowered to a minimum and let it cook.

3. When soup acquires an appearance of jam, salt and water is added, it is boiled for a few minutes. Meanwhile, the bread is cut and placed in the dishes. The Menorquina soup is served on the PAN to soak well.

4. At the time of cooking the soup must be kept in mind that the more vegetables are cooked over low heat, because the result will be a very juicy jam texture soup.
