The Minestrone soup comes from Italian cuisine and refers to a recipe made with cooked vegetables, aromatic herbs and pasta. In the original recipe it also includes bacon or beicon, but we have preferred to prepare it without meat, suitable for vegetarians. This soup is very reconstituent, it provides many vitamins and is a fabulous dish for any autumn or winter dinner. If you want healthy, vegetarian and warm dishes, take a look at this homemade soup that we show you in recipesgratis.net.

Ingredients to make Minestrone soup:
1. We gather all the ingredients to make the Minestrone soup. Remember that the original recipe carries some meat that you can add if you want.
2. We cut the onion and the leek into medium pieces and saute them in a pot with olive oil.
3. Next, we peel the carrot, cut it into slices and add it to the pot. We also incorporate the whole peeled garlic.
4. It is time to add the zucchini. To do this, we previously peel it and chop it into squares.
5. We remove the ends of the green beans, we wash them, cut them into 2-centimeter pieces and add them to the sauce. We cook for 3 minutes and salt and pepper.
Trick: If you want to add bacon, incorporate it at this time to the sauce.
6. Now we add the water, bay leaf and whole peeled tomatoes. Let cook for half an hour over medium heat.
7. Finally, we throw the peas and pasta. In this case we have used canned peas (already cooked) but fresh or frozen peas can also be used. Lets cook the Minestrone soup until the pasta is tender.
8. We serve the Minestrone soup with a little parsley and chopped basil. If you like vegetarian soups you can try the cauliflower and pumpkin soup or carrot and ginger cream. Bon Appetite!
