Marinera mussel soup recipe

We clean the mussels well and open to the steamed (that is, with their own water).

2 medium tomatoes

3. We pass the liquid of cooking mussels through a fine strainer and also reserve.

4. We chop the onion and the white part of the leeks very fine, fry in the oil until they begin to take color.

5. Add the peeled and cut tomatoes in pieces, 4 minutes later, add 1 liter and 1/2 of boiling water.

6. We season with the nail, the parsley, and the bay leaf. When it begins to boil again, we add the rice mixing it well.

7. We lower the fire a little and season with the pepper and saffron pinches, let the rice cook and once made, we remove the sprig of parsley and the bay leaf.

8. Finally, we add the meat of the mussels and the liquid of its cooking, let cook 2 more minutes and sprinkle with a little chopped parsley.

9. Serve very hot.
