We elaborate the fish broth by boiling the rape head (without guts) with the green of the leek and some stems of parsley.

Ingredients to make fish soup and homemade seafood: |
For 4 people :: 400 g of rappes. 400 g of hake. 200 g of clams. | Seafood cream :: 200 g of prawns. 300 g of carrot. 300 g of onion 2 leeks. 40 g of rice. : 1 Rape head. Green part of a leek. 1.25 liters of water. |

2. After boiling for 1 hour, we strain a fine strainer and reserve.
3. For seafood cream: We chop the vegetables and put to poach.
4. Add the tomato cut into segments, heads and gambas housings.
5. We reserve the meat of the prawns for the soup.
6. We flame with cognac, add the rice and wet with a liter of fumet.
7. We let boil until the rice is made and crush.
8. Once crushed we pass everything through the strainer.
9. We put this cream to boil with the toasted bread for half an hour.
10. Add the fish cut into dice, prawns and clams.
11. We let it boil 10 minutes and put salt to point, adding more broth if we want it caldoso or less broth if we like creamy.
12. Sprinkle chopped parsley.
